About the role
chefs need to know veg and non veg Gujarati cuisine, Indian cuisine
generally….mughlai, rajasthani, etc… Chinese, Thai, continental, Italian and
Mexican. Should know from starter to desserts.
He would need to know how to prepare a menu when entertaining - needs to know how to make canapés if it’s a cocktail, buffet if it’s a large crowd, and sit down for a small crowd, know how to arrange and display the food, plating, etc. He should be hands on and be prepared to also go shopping for ingredients, come back and prep and cook for the meal.
