THE ROLE
The Sous Chef is the operational second-in-command of Veronica's kitchen and plays a key role in delivering exceptional food quality, efficient service and strong team leadership.
Working closely with the Chef de Cuisine, the Sous Chef is responsible for leading daily kitchen operations, supervising service, developing the kitchen team and ensuring operational standards are consistently maintained. In the absence of the Chef de Cuisine, the Sous Chef assumes responsibility for the kitchen and supports the continued success of both Veronica's outlets.

WHO YOU WILL REPORT TO
You’ll report directly to the Chef de Cuisine, who will guide you in your day-to-day operations and help you continue developing your leadership and culinary skills. You’ll have the opportunity to work closely with senior chefs, receiving mentorship and exposure to industry leading practices, and contributing to the overall success of the team.
WHAT YOU’LL DO
- Support the Chef de Cuisine in the day-to-day management of kitchen operations across Veronica's outlets.
- Lead kitchen operations during assigned shifts, ensuring efficient service, quality execution and smooth communication across all stations.
- Supervise and support the kitchen team, ensuring recipes, portioning, presentation and food quality standards are consistently maintained.
- Coordinate with the Central Production Kitchen to ensure proper receiving, storage, stock rotation and utilisation of products.
- Assist with inventory management, ordering, stock counts and waste control to support food cost objectives.
- Train, mentor and develop junior chefs while fostering a culture of teamwork, accountability and continuous learning.
- Monitor labour deployment during service and ensure effective station management throughout each shift.
- Maintain the highest standards of food safety, hygiene and compliance with Hunger Inc. SOPs and statutory regulations.
- Conduct regular quality checks and address operational issues promptly to maintain consistency and efficiency.
- Work closely with Restaurant Managers to ensure seamless communication between the kitchen and front-of-house teams.
- Monitor equipment performance, kitchen cleanliness and operational readiness, reporting maintenance requirements as needed.
- Step into the responsibilities of the Chef de Cuisine during planned leave or absence, ensuring uninterrupted operations.
- Lead by example during service, maintaining composure, professionalism and a solutions-focused approach in a high-volume environment.
SKILLS & EXPERIENCE
- 3-5 years of progressive kitchen leadership experience, including experience as a Junior Sous Chef or Sous Chef within a high-volume restaurant, café or hotel environment.
- Formal culinary qualification from a recognised culinary institution preferred.
- Experience working in a Central Production Kitchen-supported operation is highly desirable.
- Strong understanding of food safety, inventory management, food costing and labour planning.
- Proven ability to lead teams and supervise busy kitchen operations.
- Excellent communication, organisational and coaching skills.
- Strong problem-solving abilities with attention to detail.
- Comfortable working in a fast-paced, multi-unit hospitality environment.
- Proficient in inventory and kitchen management systems.
